- 3–4 boneless, skinless chicken breasts
- 8 oz spaghetti
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded sharp cheddar cheese
- 8 oz cream cheese, softened
- 1 red bell pepper, diced
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/2 tsp paprika
- 2 green onions, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Lightly coat a large casserole dish with nonstick spray.
- In a skillet, heat olive oil over medium heat. Cook chicken breasts until golden brown and cooked through, about 7-10 minutes per side. Shred once cooled.
- Boil salted water in a pot and cook spaghetti until al dente; drain and reserve half a cup of pasta water.
- In a bowl, combine shredded chicken, cooked spaghetti, cream of chicken soup, cream cheese, diced bell pepper, spices, and half of the cheddar cheese. Mix well.
- Transfer mixture to the prepared casserole dish and spread evenly. Top with remaining cheddar cheese.
- Bake for 25-30 minutes until bubbly and golden brown. Let sit for 5 minutes before serving and garnish with green onions.
