  • 34 boneless, skinless chicken breasts
  • 8 oz spaghetti
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded sharp cheddar cheese
  • 8 oz cream cheese, softened
  • 1 red bell pepper, diced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp paprika
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly coat a large casserole dish with nonstick spray.
  2. In a skillet, heat olive oil over medium heat. Cook chicken breasts until golden brown and cooked through, about 7-10 minutes per side. Shred once cooled.
  3. Boil salted water in a pot and cook spaghetti until al dente; drain and reserve half a cup of pasta water.
  4. In a bowl, combine shredded chicken, cooked spaghetti, cream of chicken soup, cream cheese, diced bell pepper, spices, and half of the cheddar cheese. Mix well.
  5. Transfer mixture to the prepared casserole dish and spread evenly. Top with remaining cheddar cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown. Let sit for 5 minutes before serving and garnish with green onions.
