  • 1 lb shrimp, deveined
  • 1 lb boneless chicken thighs, diced
  • 8 oz andouille sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 bay leaves
  • 2 tbsp olive oil
  • Fresh parsley or green onions for garnish

Instructions

  1. Prepare your ingredients by chopping the onion, bell pepper, celery, and garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onion, bell pepper, celery, and garlic until softened (about 5 minutes).
  3. Add diced chicken thighs and sliced sausage to the pot; cook until browned on all sides (approximately 7 minutes).
  4. Stir in tomato paste and Cajun seasoning; cook for another 2 minutes until fragrant.
  5. Pour in chicken broth and add bay leaves. Bring to a boil then reduce heat to low; simmer uncovered for about 30 minutes.
  6. During the last 5 minutes of cooking, stir in shrimp until they turn pink and opaque. Remove bay leaves before serving.
  7. Garnish with fresh parsley or green onions.
