  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Tortilla chips for serving

Instructions

  1. In a skillet over medium heat, sauté chopped onion for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  2. Add the ground beef to the skillet and brown for 7-10 minutes until fully cooked.
  3. Transfer the beef mixture to your slow cooker. Stir in black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper until well combined.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 10 minutes before serving, sprinkle shredded cheese on top and let it melt under the lid.
