Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz spaghetti
  • 1 cup shredded Monterey Jack cheese
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 medium onion, diced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare your ingredients by chopping bell peppers and onions while boiling water in a large pot for the spaghetti.
  2. In a skillet over medium heat, heat olive oil. Add onions and bell peppers; sauté until soft (about 5 minutes).
  3. Season chicken breasts with salt, pepper, and Italian seasoning. Sear in the skillet until golden brown on both sides (approximately 6 minutes each side).
  4. Add minced garlic to the skillet; sauté briefly before adding canned tomatoes. Let it simmer for about 10 minutes.
  5. Cook spaghetti according to package instructions until al dente; drain and reserve some pasta water.
  6. Combine cooked spaghetti with the sauce mixture in the skillet, using reserved pasta water to achieve desired consistency. Top with Monterey Jack cheese.
