- 4 medium Carrots, cut into chunks
- 2 large Russet Potatoes, cubed
- 2 medium Sweet Onions, diced
- 2 cups Low-Sodium Beef Broth
- 1 cup Red Wine (dry)
- 4 cloves Garlic, minced
- 2 tsp Fresh Thyme or 1 tsp Dried Thyme
- 2 tsp Fresh Rosemary or 1 tsp Dried Rosemary
- Salt and Pepper to taste
- 2 tbsp Olive Oil
Instructions
- Prepare your ingredients by chopping onions, peeling carrots, and cubing potatoes.
- In a large skillet over medium-high heat, heat olive oil. Season the chuck roast with salt and pepper and sear on all sides until golden brown (about 4-5 minutes per side).
- Transfer the seared roast to a slow cooker. Sauté onions and garlic in the same skillet for about 3 minutes until fragrant; add to the slow cooker.
- Layer carrots and potatoes around the roast in the slow cooker.
- In a bowl, whisk together beef broth, red wine, thyme, and rosemary. Pour over the roast and vegetables.
