  • 3 lbs Beef Chuck Roast
  • 4 medium Carrots, cut into chunks
  • 2 large Russet Potatoes, cubed
  • 2 medium Sweet Onions, diced
  • 2 cups Low-Sodium Beef Broth
  • 1 cup Red Wine (dry)
  • 4 cloves Garlic, minced
  • 2 tsp Fresh Thyme or 1 tsp Dried Thyme
  • 2 tsp Fresh Rosemary or 1 tsp Dried Rosemary
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil

Instructions

  1. Prepare your ingredients by chopping onions, peeling carrots, and cubing potatoes.
  2. In a large skillet over medium-high heat, heat olive oil. Season the chuck roast with salt and pepper and sear on all sides until golden brown (about 4-5 minutes per side).
  3. Transfer the seared roast to a slow cooker. Sauté onions and garlic in the same skillet for about 3 minutes until fragrant; add to the slow cooker.
  4. Layer carrots and potatoes around the roast in the slow cooker.
  5. In a bowl, whisk together beef broth, red wine, thyme, and rosemary. Pour over the roast and vegetables.
  6. Cook on low for 8 hours or high for 4 hours until meat is tender.
