  • 2 cups cooked ham, diced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper (adjust to taste)
  • 2 tbsp unsalted butter
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, melt the butter and sauté the chopped onion until translucent. Add the diced ham and cook until slightly crispy.
  3. In a large bowl, mix together sour cream, cheddar cheese, garlic powder, salt, and pepper until creamy.
  4. Layer half of the sliced potatoes in the greased baking dish. Spread half of the cheese mixture over the potatoes followed by half of the ham mixture. Repeat the layers with remaining ingredients.
  5. Top with panko breadcrumbs for crunch. Cover with foil and bake for 45 minutes; remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
