  • 1 lb lean ground beef
  • 1 cup breadcrumbs (plain or Italian)
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 1/3 cup balsamic vinegar
  • 1/3 cup ketchup (divided)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté onions until translucent (about 5 minutes).
  3. In a large bowl, mix ground beef, breadcrumbs, eggs, sautéed onions, thyme, oregano, salt, pepper, and half of the ketchup.
  4. Shape the mixture into a loaf on a parchment-lined baking sheet.
  5. In a small bowl, whisk balsamic vinegar, brown sugar, and remaining ketchup for the glaze.
  6. Brush half of the glaze over the meatloaf and bake for about 1 hour or until internal temperature reaches 160°F (70°C), basting with remaining glaze halfway through.
