  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup
  • 2 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 tbsp fresh parsley or thyme, chopped

Instructions

  2. Sauté the chopped onion in a skillet over medium heat for 5-7 minutes until translucent.
  3. In a large bowl, combine ground beef, breadcrumbs, eggs, sautéed onions, minced garlic, Worcestershire sauce, salt, pepper, and fresh herbs. Mix until just combined.
  4. Shape the mixture into a loaf on a lined baking tray.
  5. In a small bowl, whisk together balsamic vinegar and ketchup; drizzle over the meatloaf.
  6. Bake for 60-75 minutes until the internal temperature reaches 160°F (70°C).
