- 1 can (15 oz) black beans, rinsed
- 2 bell peppers, chopped
- 1 medium onion, chopped
- 1 cup shredded sharp cheddar cheese
- 2 tbsp taco seasoning
- 1 can (14.5 oz) diced tomatoes with juices
- 1 cup low-sodium beef broth
Instructions
- In a skillet over medium heat, brown the ground beef until no longer pink. Stir in taco seasoning until fragrant.
- In the slow cooker, combine browned beef, black beans, chopped bell peppers, onion, diced tomatoes (with juices), and beef broth. Mix well.
- Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover to melt.
