Description

Slow Cooker Cowboy Casserole is a hearty and comforting dish that’s perfect for busy weeknights or festive gatherings. This easy-to-make casserole combines tender ground beef, colorful bell peppers, black beans, and gooey cheddar cheese, all simmered together to create a deliciously satisfying meal. Ingredients

  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, rinsed
  • 2 bell peppers, chopped
  • 1 medium onion, chopped
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 cup low-sodium beef broth

Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink. Stir in taco seasoning until fragrant.
  2. In the slow cooker, combine browned beef, black beans, chopped bell peppers, onion, diced tomatoes (with juices), and beef broth. Mix well.
  3. Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover to melt.
  5. Serve in bowls and enjoy!
