  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin powder
  • 2 bay leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your vegetables by peeling and chopping the onions, carrots, and celery into even pieces.
  2. In a large pot over medium heat, drizzle olive oil and sauté the chopped onions until translucent. Add minced garlic and stir until fragrant (about 30 seconds).
  3. Add diced carrots, celery, and rinsed lentils to the pot. Mix well.
  4. Pour in vegetable broth along with bay leaves and cumin powder. Bring to a boil, then reduce heat to low.
  5. Simmer uncovered for 25-30 minutes until lentils are tender but not mushy.
  6. Season with salt and pepper to taste, removing bay leaves before serving.
