  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 cup diced carrots
  • 1 cup green peas
  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions (sliced)
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Dice carrots and slice green onions.
  3. In the air fryer, sauté diced carrots with sesame oil for 5 minutes until tender.
  4. Add cooked jasmine rice and scrambled eggs; stir well to combine.
  5. Drizzle with soy sauce and sprinkle garlic powder; mix thoroughly.
  6. Air fry for an additional 10 minutes, shaking halfway through for even cooking.
  7. Top with sliced green onions before serving hot.
