- 4 large bell peppers (red, yellow, or green)
- 1 can (5 oz) high-quality tuna in olive oil, drained
- 1/2 cup red onion, finely chopped
- 1/2 cup fresh flat-leaf parsley, chopped
- 1/3 cup black olives, chopped
- 1/2 cup feta cheese, crumbled
- Juice of 1 lemon
- 2 tbsp extra-virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds. Place upright in a baking dish.
- In a large bowl, combine drained tuna, red onion, parsley, black olives, feta cheese, lemon juice, olive oil, salt, and pepper. Mix thoroughly.
- Generously stuff each bell pepper with the tuna mixture.
- Pour a little water into the bottom of the baking dish to create steam. Cover with aluminum foil and bake for 25 minutes until peppers are tender but still hold their shape.
- Remove foil during the last 5 minutes of baking to allow tops to brown slightly.
