Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 1 can (5 oz) high-quality tuna in olive oil, drained
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh flat-leaf parsley, chopped
  • 1/3 cup black olives, chopped
  • 1/2 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds. Place upright in a baking dish.
  2. In a large bowl, combine drained tuna, red onion, parsley, black olives, feta cheese, lemon juice, olive oil, salt, and pepper. Mix thoroughly.
  3. Generously stuff each bell pepper with the tuna mixture.
  4. Pour a little water into the bottom of the baking dish to create steam. Cover with aluminum foil and bake for 25 minutes until peppers are tender but still hold their shape.
  5. Remove foil during the last 5 minutes of baking to allow tops to brown slightly.
