- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup plain Greek yogurt
- 1 medium cucumber, grated and squeezed dry
- 2 garlic cloves, minced
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp fresh dill (or 1 tbsp dried dill)
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Add chicken breasts; coat well. Marinate for at least 30 minutes in the fridge.
- Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked.
- In another bowl, mix Greek yogurt with grated cucumber, minced garlic, lemon juice, dill, salt, and pepper to create tzatziki sauce.
- Once chicken is cooked and slightly cooled, chop into bite-sized pieces. In a large bowl, combine chicken with cherry tomatoes and red onion.
- Drizzle tzatziki sauce over the salad mixture and toss gently to combine.
